Daily Maintenance Guide for Fully Automatic Smoking Stove
The fully automatic smoking oven is the core equipment for processing meat products such as sausage and ham, and its maintenance quality directly affects product quality and equipment lifespan. The following are maintenance points for modules:
1、 Daily maintenance
1. Cleaning and hygiene
Furnace surface: Wipe the furnace body with a damp cloth and avoid using strong acid or alkali cleaning agents.
Smoking room: After daily production, clean up residual cigarette ash and oil stains to prevent carbon buildup from causing fires.
Drainage system: Check if the drainage pipes are unobstructed to avoid bacterial growth caused by the accumulation of condensed water.
2. Sealing inspection
Sealing strip of furnace door: After closing the furnace door, observe whether there is smoke leakage. If the sealing strip ages, it should be replaced in a timely manner.
Pipeline connection: Check whether the steam and exhaust pipes are loose to prevent high-temperature gas leakage.
2、 Weekly maintenance
1. Lubrication and fastening
Transmission components: Add food grade lubricating oil to motors, chains, bearings, and other parts to reduce friction losses.
Screw tightening: Check if the screws on the equipment casing and bracket are loose to avoid abnormal noise during operation.
2. Electrical system
Terminal block: Use insulated tools to check whether the power cord and sensor wiring are loose, in order to prevent poor contact from causing faults.
Instrument calibration: Check the deviation between the displayed values of temperature and pressure gauges and the actual parameters. If the error is greater than 2%, calibration is required.
3、 Monthly maintenance
1. Inspection of key components
Heating tube: After turning off the power, use a multimeter to check the resistance value of the heating tube (the normal range is 20-100 Ω depending on the power). If there is an abnormality, it needs to be replaced.
Fan blades: Clean the oil stains on the blades, check if the blades are deformed, and ensure that the air volume is ≥ 90% of the rated value.
Smoker addition device: Test whether the nozzle is blocked, adjust the atomization effect, and ensure that the smoke is evenly distributed.
2. Safety device testing
Pressure relief valve: Manually press the pressure relief valve to confirm that the steam can be discharged normally, avoiding explosion caused by excessive pressure.
Overtemperature alarm: Simulate overtemperature conditions (such as set temperature+10 ℃) and check if the alarm is triggered.
4、 Quarterly maintenance
1. Deep cleaning
Inside the smoking chamber: Use a high-pressure water gun to flush the furnace wall, remove stubborn carbon deposits, and avoid affecting heat conduction efficiency.
Smoke exhaust duct: Disassemble the duct and clean the oil stains on the inner wall with a brush to ensure smooth smoke exhaust.
2. Performance testing
Thermal efficiency test: Record the steam consumption under the same operating conditions. If the thermal efficiency decreases by more than 10%, check whether the insulation layer is damaged.
Smoke uniformity: Place multiple temperature probes inside the furnace to detect temperature differences in each area and adjust the fan speed or guide plate angle.
5、 Annual maintenance
1. Professional maintenance
Electrical system: A certified electrician shall inspect the aging condition of the wiring inside the control cabinet and replace the aging cables.
Pressure vessel: Entrust a third-party organization to conduct a hydrostatic test on the furnace body (pressure ≥ 1.25 times the working pressure) to ensure safety.
2. Replacement of consumables
Sealing strip: Replace the aging sealing strip to avoid smoke leakage.
Filter screen: Replace the steam filter element to prevent impurities from entering the heating system.
6、 Common faults and solutions
Possible causes and solutions for fault phenomena
Temperature fluctuation>± 5 ℃ sensor malfunction/abnormal fan calibration sensor/inspection of fan bearings
Uneven smoking, nozzle blockage/low fan speed, cleaning nozzle/adjusting fan parameters
Aging of steam leakage gasket/replacement of gasket due to pipeline rupture/repair of pipeline
7、 Maintenance precautions
Power off operation: When electrical maintenance is involved, the power must be cut off and a warning sign must be hung.
Record archiving: Fill out the "Equipment Maintenance Record Form" after each maintenance to facilitate problem tracing.
Spare parts management: Reserve commonly used spare parts (such as sealing strips, heating tubes) to shorten maintenance time.
summarize
Through systematic daily maintenance, the equipment failure rate can be effectively reduced and the service life can be extended. It is recommended that the company develop a "Smoke Furnace Maintenance SOP" and regularly train operators to ensure standardized maintenance processes.
